Hi.
I would like to make a mini (4 inch) mushroom and leek quiche that I could have for lunch.
I'm not sure which ingredients I would need, how much of them and how long it would take me to make.

Makes its own crust.
Ingredients for a mini tart:
Handful of fresh baby spinach
1/3 cup sliced mushrooms
1 small shallot sliced thinly
1 Tbsp basil pesto
1/3 cup Swiss cheese or Gruyere, shredded
1/4 cup Bisquick
1/2 cup half and half
1 egg
salt and pepper to taste
dash of Tabasco sauce
sprinkle of nutmeg
Method:
Preheat oven to 350 degrees F.
Stuff spinach into bottom of 4-inch spring-form baking pan
Saute mushrooms and shallots in 1 Tbsp butter until liquid is absorbed
Spoon over spinach.
Spoon in pesto and top with cheese.
In a small bowl, whisk together Bisquick, half and half, egg, salt and pepper, and Tabasco.
Pour over cheese and sprinkle a pinch of nutmeg on the top.

This is very simple for a 10 inch pan, so you can roughly divide the ingredients by 2!
One usually doesn 't mix mushrooms and leeks, but if you want to , saut茅 2 leeks and add to the recipe
EDIT: leeks are fine, really. if you feel rich, sliced smoked salmon, or little cubes of cooked chicken, smoked ham, fried bacon. what do you think?
