I have a carrot cake recipe that is for an 8 x 8 pan but I would like to make mini muffins. The original recipe is to be baked for 40 to 45 minutes at 350. I just reread your words and noticed you said mini muffins - for a regular muffin tin I'd do the 20 to 30 minutes but for a mini muffin, I'd even cut it down to 10-15 minutes and check them. It doesn't take long at all in a mini muffin pan.
